Bone Steak

Satu lagi resepi Johor..
Kalau kat pasar ramadhan di Johor memang mesti ramai yang jual Bone Steak ni, tak payah lah susah2 masak... tapi kat shah alam ni mana nak cari... kena lah masak sendiri .. Yang ni i buat untuk 'Moray'.. sedap makan ngan roti...


2 ketul lamb shank
bawang merah
bawang putih
halia
serai
kobis
carrot
1 sup bunjut
1 sudu jintan halus
1 sudu ketumbar
1/2 sudu lada hitam
tomato sos
tomato puree

1) rebus shank dengan bawang merah, bawang putih, halia, serai dan sup bunjut
2) masukkan jintan, ketumbar dan lada hitam yang disangai dan diblend halus
3) masukkan tomato puree, tomato sos, kobis dan carrot
4) perasakan dengan garam dan gula
5) tuangkan tepung jagung untuk memekatkan kuah

*hidang bersama roti, biasanya roti baguette (saya guna sandwich loaf saja)
*perah limau nipis lebih sodap!

Daging Kandar


Cak! Lama tak jumpa, kan? Busy sesangat minggu ni.. ke hulu... ke hilir...
'Kerja' sebagai housewife ni sentiasa ler busy... confirm tak bleh ambik cuti langsung....
Baru nak rileks .. belakang ada jek yang menempek dan mengeluarkan suara2 sedih nak itu... nak ini....heheh... *mode berleter*..
Anyway, hari ni i fikir punya fikir, tetiba nak makan ala2 mamak lagi (hari tu masak kambing Rogan Josh)... so i buat Daging Kandar pulak...
lama dah tak buat nih...



Resepi lebih kurang jek dengan kari daging, minus santan, plus kicap pekat dan tomato sos.. Tuan2 dan Puan2 sure pandai buat kari daging kan? so i takyah type resepi pepanjang kat sini ek...

Kambing masak Rogan Josh

Sedapnya kambing... nyum nyum...
Hari ni i teringin nak makan masak Rogan Josh, pergi cari readymade sauce by PATAK'S kat cold storage subang parade...

 hampa... takde... so terpaksa lah google resepi.. hasilnya...

Kambing masak Rogan Josh version 'terbakar'..uwaaaa...

Ini semua bahana tengok cite Bella Calamidades at TV3... konon nak simmer.... sedar2... bau hangit... uwaaa...... takyah la bagi resepi ek...

sakit hati punya pasal,  pi goreng cempedak pulak....

hilang terus stress ai...

resepi:
1 cawan tepung gandum
1 cawan tepung jagung'
1 cawan tepung beras
1 biji telur
pewarna kuning
sedikit garam

1) bancuh semuanya dengan air
2) gaul dengan cempedak
3) goreng terendam

* hidang bersama teh... hmmm.... marbelles :))

I'm backkkk

Cewah... i'm back i'm back pulak kita yek... macam la ada yang suka... he he...
Bukan apa.... mood cuti masih ada lagi ni... so sangat lah happy untuk sisa2 cuti yang tinggal beberapa hari lagi ni... 14 hari rasa macam sekelip mata je... macam2 macam tempat pergi... so memang dapur i pun ikut cuti sama le... :))
Semalam baru lah anak2 i balik dari rumah nenek diorang... and my family pulak datang visit... so barulah dapur i start enjin semula...
Apa yang i masak? seperti biasa sempoi2... Sup Tulang, Ayam Goreng Berempah dan Sayur Goreng Campur....

Sup tulang istimewa saripah... i'll post the resepi minggu depan je lah ekkk...

Asam Rebus Daging dan Betik Muda


Daging
Bawang merah
Bawang putih
Halia
Lengkuas
Kunyit Hidup
Serai - dititik
Cili padi
Belacan
Asam keping
Daun kesum
Betik muda

1) Tumbuk kasar bawang merah, bawang putih, halia, lengkuas, kunyit dan sedikit belacan
2) Rebus daging bersama bahan tumbuk dan serai sehingga 3/4 empuk
3) masukkan asam keping, cili padi dan betik muda
4) biarkan hingga daging empuk
5) masukkan daun kesum

Spaghetti with Roast beef and Rocket salad

Menggiurkan tak tajuk hari ni? My family kalau daging2 ni memang terliur ajek... Macam Cik Mat cakap... SEDAP GILER...


Tenderloin Beef
Black pepper sos
Tomato sos
Rosemary
Thyme
oregano
Salt n Pepper
Olive Oil
Bawang putih
Bawang merah
Buah tomato
Terung dihiris nipis
Setengah peket spaghetti
Butter
Daun Basil
Serbuk paprika

1) marinade beef dengan black pepper sos, tomato sos, rosemary, thyme, oregano, olive oil, salt n pepper
2) roast beef dengan buah tomato dan terung on 200degrees selama 30-40minit, siram sedikit lagi olive oil
3) tumis bawang putih, bawang merah
4) masukkan spaghetti bersama buah tomato dan terung yang sudah digrill tadi
5) taburkan garam, pepper, serbuk paprika, daun basil dan butter
6) gaul rata
7) hidang spaghetti bersama roast beef yang dihiris nipis dan Rocket salad (instant with balsamic dressing)

Daging Kicap Tomato


1/2 kg daging batang pinang
1 biji bawang besar
3 ulas bawang putih
1/2 inci halia
5 sudu besar kicap manis
1 sudu besar kicap pekat
2 sudu besar sos tomato
Buah tomato
Lada benggala
Lada hitam

1) kisar bawang besar, bawang putih dan halia
2) tumis bahan kisar sehingga garing
3) masukkan daging dengan sedikit air, renihkan sehingga empuk
4) masukkan kicap manis, kicap pekat dan sos tomato
5) perasakan dengan sedikit garam dan lada hitam
6) masukkan buah tomato dan lada benggala
7) tutup api

Hidangan yang sangat simple for today's lunch :)

Beef Rice (Nasi Daging)

For rice:
Sliced Beef from the soup
2.5 cups beef soup*
0.5 cup evaporated milk
2 tbsp ghee oil
2 cups Basmathi Rice
2 inches Cinnamon
1 Anise
5 cloves
5 cardamom
1 Onion
5 Garlic
1 cm Ginger
1 tsp Masala powder
2 tbsp tomato puree
5 inches pandan leave
Salt and sugar to taste

1. Blend onion, garlic, ginger and masala powder until it forms a paste.

2. Heat the Ghee oil. Fry cinnamon, anise, cardamom, cloves and the paste until fragrant.

3. Add in tomato puree, pandan leave and rice. Stir evenly, then add in evaporated milk and beef soup. Dash the salt and sugar to taste. Stir it again.

4. Close the rice pot. Stir gradually until rice is cooked.

5. Add in the sliced beef and stir the riced until the beef is fully covered in the rice.

6. Close the rice pot and wait for 2-3 minutes.

7. Rice is ready to be served with the beef soup.

For Beef Soup*:
500gm Beef
5 cups Water
2 inches Cinnamon
1 Anise
5 cloves
5 cardamom
1 inch Ginger, sliced thinly
3 Garlic, sliced thinly
1 Lemon grass, bruised and sliced
Salt and pepper to taste

1. Heat oil. Fry everything together until fragrant. Add in Beef and Water.

2. Let the soup simmer until beef is tender.

3. Add in salt and pepper to taste

4. Bring out the beef from the soup and sliced it thinly.

Sweet Pepper beef

500gm Beef Shank
1 cup Beef stock
1 tbsp chilli paste
1 Onion, slice thinly
3 pieces Garlic, slice thinly
1 cm Ginger, slice thinly
4 tbsp Sweet soya sauce
1 tsp Black Pepper, grind
1 tbsp Plum Sauce
100gm Pineapple/Ananas, diced
1 green chilli, discard hot seeds inside
A pinch of Salt
3 tbsp Cooking oil
Spring Onion for garnishing

1. Boil beef until tender. Then slice it thinly.

2. Heat oil and fry chilli paste until cooked. Then add in sliced onion, garlic and ginger. Simmer until browned and fragrant.

3. Add in sliced beef, sweet soya sauce, plum sauce and pepper then stir evenly.

4. Pour in one cup of the beef stock and let it simmer until the gravy is thickened. Stir the gravy gradually so that the sauce spreads on the beef evenly.

5. Add salt to taste. Then finally the pineapple and green chillies.

6. Turn of the stove and sprinkle the remaining leaves.

Serve with warm rice.

Beef Congee

Beef Congee

100gm Beef, boiled till tender
1 Inch Ginger
2 Garlic
5 shallots
1 teaspoon of Kurma powder
1/2 cup Rice, washed
Carrot, diced
Potato, diced
Spring onion, chopped
Fried shallots
250ml Water
Salt and white pepper to taste

1. Boil Beef until tender, then slice it thinly.

2. Blend together ginger, garlic, shallots and kurma powder until it forms a paste.

3. Heat oil. Fry the kurma paste until fragrant. Add in sliced beef. Then pour in water, simmer for about 5 minutes.

4. Add carrot, potatoes and rice and stir gradually until rice is cooked.

5. Then salt and white pepper to taste.

6. Finally, add in the spring onion and fried shallots as garnishing

Serve warm with soya mixture*

*Soya mixture (blend) :

3tbsp sweet soya sauce
1 garlic
1 red chilli
a dash of lime juice

Bukhari Beef in Sweet Soya Sauce (Daging Kicap Bukhari)

500g beef shank
5 tablespoon beef stock (from boiling beef shank)
2 onions - sliced thinly
3 dried chili1/2 teaspoon salt
15 pieces curry leaves
3 tablespoon sweet soy sauce
Bukhari mix powder
*Bukhari mix
1/2 teaspoon fennel powder
1 teaspoon cumin powder
pinch of black pepper powder

1. Boil beef shank until tender. drain beef but reserve stock. slice beef thinly and set aside.

2. Soak dried chilis in warm water for 10 minutes. drain and blend. reserve paste for frying.

3. Heat oil in medium sized pan. Fry onions until brown. Add chili paste and simmer in medium heat for 1 minute.

4. Add bukhari spice and simmer for another 1 minute. Add sliced beef and stir evenly. Add sweet soy sauce.

5. Stir in 5 tablespoons of beef stock. simmer until sauce reduces to a slightly thick mixture.

6. Stir in salt and curry leaves. cover pan and remove from flame.

Best served with bukhari rice.
